Today is my Mom's 46th birthday! Oops did I just release the actual age of my beautiful mother, yep! Although I didn't get to spend the day with her I baked her something special for her "surprise" birthday party tomorrow...which will take place over my lunch hour while my sister and nephew are at her place! I think it's safe to post this tonight as she is out celebrating! So here's to my momma!

Chili
There is nothing better than a cup of Mom's Chili on a cold snowy day in North Dakota!
Mom's Chili
2 Pkgs dry chili mix *We always use the Schilling brand
3 Lbs. hamburger
1 Small onion - chopped
1 Green pepper - chopped
2 Cans kidney beans - don't drain
2 Cans Tomato Soup + 2 cans water
1 Tsp chili powder
1/2 Tsp red pepper powder
2 Cans diced tomatoes - don't drain
Directions: In a large soup kettle, brown hamburger along with onions and green pepper. Add the remaining ingredients. Bring to a boil then turn heat down and let simmer until all is cooked through. Garnish with shredded cheddar cheese, sour cream, and crackers as wanted. We normally serve our chili with a slice of garlic texas toast!
*This recipe has been doubled to feed our family of six. If you are cooking for less just cut the recipe in half.
