It has been super hot the past couple days, leaving me not so hungry. Of course hot or not everyone has to eat something, I created this for lunch:
1 1/2 pounds taco meat
1 can fat free refried beans
shredded cheese
lettuce, tomatoes, olives, sour cream, taco sauce
Layer chips on the bottom of a 9x13 pan, spread taco meat evenly across the chips, smear beans on top, and sprinkle with cheese. Bake at 350 for about 20 minutes or until the cheese is melted and slightly browning.
Serve with your favorite taco toppings: lettuce, tomatoes, olives, taco sauce, sour cream.
You will be happy to find the chips keep their crunch!!
